Vegetable Soup Recipe:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 yellow bell pepper, diced
  • 1 cup green beans, trimmed and chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup small pasta (optional)
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

  2. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. Stir in diced zucchini, yellow bell pepper, and green beans. Cook for another 5 minutes, allowing the vegetables to slightly soften.

  4. Pour in the diced tomatoes with their juices and add vegetable broth to the pot. Season with dried thyme, dried oregano, salt, and pepper. Bring the soup to a boil.

  5. If you're using pasta, add it to the pot and cook according to the package instructions.

  6. Reduce the heat to a simmer and let the soup cook for an additional 10-15 minutes, or until all the vegetables are tender.

  7. Adjust the seasoning if needed and serve the vegetable soup hot, garnished with fresh parsley.
